On Wednesday night, the Frenchman prepared a five-course menu for a group of lucky patrons above Mackenzie Quarters' Ms Batterhams bar to mark the French Independence day celebration.
"I've never been to Bendigo before, but I was very much looking forward to this event," he said.
"The city has such a wide range of beautiful local produce and I really wanted to put them on display."
Mr Reymond has spent two days preparing for the night's event and wanted to bring a little of his past to the menu.
More stories:
"I'm from the village of Cuiseaux, so I have brought with me a number of products to incorporate into my dishes," he said.
"There will be very French dishes such as escargot, local produce from McIvor Farm and more plus beautiful wine to pair with each meal.
"I'll also be using a lot of French techniques when I cook too."
Mackenzie Quarters owner Rhianwen Seiter said she was able to pull a few strings to get the famous chef to Bendigo.
"Jacques' son Eddie has worked with our head chef Travis Rodwell a few times so that's how we got in touch," she said.
"We're very lucky to have him here and this event has brought a lot of excitement."
Ms Seiter said tickets to the event sold out in under 45 minutes.
"We had a similar event back in May and that sold out really quickly," she said.
"Because we're hardly allowed to travel interstate, let alone overseas, we wanted to bring something different to Bendigo."
Mr Reymond said he would definitely like to visit Bendigo again after his experience.
"It's such a beautiful place," he said.
"Hopefully next time I'm here, it won't be for work. There are a lot of places I'd love to see."
