The pair battled for more than 150 minutes in hot conditions and provided the crowd with an enthralling battle that finished with the No.8 seed Escobedo coming from one set down to win 5-7, 6-3, 7-5.
Earlier, the women's final was won by Belgium's Ysaline Bonaventure, who ended the brilliant run of qualifier Victoria Jimenez Kasintseva.
In the men's final, Escobedo and France's Couacaud produced a high quality contest that went the three-set distance.
With the match tied up at one set apiece, Escobedo made the perfect start to the third set when he broke the serve of Couacaud in the opening game.
However, Escobedo's advantage was only short-lived as Couacaud broke back in the second game to even the scoreline at 1-1.
Games remained on serve until 5-5 before Escobedo claimed the crucial break to go up 6-5 and set up the chance to serve for the title.
Escobedo, ranked 164 in the world, closed the game out in style, holding serve to love and sealing the win with an ace - his 10th of the contest - down the middle.
The 25-year-old's victory came after he had required some medical treatment three games into the second set.
"I felt great through the whole week," Escobedo said after the match.
"I had a great off-season with my coach, so I came into this tournament feeling prepared and happy.
"It's my first time in Bendigo... the last champion here was Steve Johnson and he told me it's a great town and a great tournament and I was happy to come here and play."
For runner-up Couacaud it was another lengthy stint on the court, with the Frenchman having played in four of the tournament's five longest games across his singles and doubles duties.
In the women's final Bonaventure needed less than an hour to win the title in straight sets against 16-year-old Jimenez Kasintseva from Andorra.
Bonaventure, ranked 235 in the world, took the first set 6-3 before closing the match out 6-1 in the second, ending a brilliant tournament where she didn't drop a set.
"It's definitely a great start to the year," Bonaventure said.
"After a tough preparation I'm really happy to get some matches under my belt going into the Australian Open qualifiers.
"Many people came out to watch the matches during the week, so it has been a pleasure."
For rising star Jimenez Kasintseva, her path to the final included a massive 7-5, 4-6, 6-3 upset win over American Coco Vandeweghe in their semi on Saturday.
All four of Sunday's singles finalists will now switch their attention to this week's qualifying for the upcoming Australian Open.
Meanwhile, in the doubles it was the No.1 seeded pair of Ruben Bemelmans and Daniel Masur that won the men's title.
Bemelmans and Masur recorded a straight-sets final victory over Couacaud, who had to settle for a pair of runner-up finishes, and Blaz Rola 7-6, 6-4.
And in the women's doubles final Fernanda Contreas Gomez and Alycia Parks beat Australians Alison Bal and Alana Parnaby 6-3, 6-1.
Bendigo Tennis Association general manager James Rouel was thrilled with the crowds that supported the tournament, which endured some challenging weather conditions throughout.
"We've had some fantastic crowds and some great games played, so it has been fantastic for tennis in Bendigo," Rouel said.
"We've had record crowd numbers, which is great because the more the people of Bendigo come out and support events like this the more likely Tennis Australia will be to give us these tournaments. We've shown we can do it well."
