Foot traffic attracted co-owner Geoff Malone to the site, just north of Hargreaves Mall.
It's the former home of cobbler Bags on Williamson, which closed in 2018.
Transforming the space from a cobbler's shop to the new Origin's Cafe has taken two months.
Mr Malone plans to offer coffee loyalty deals and catering. He has been a pastry chef on-and-off for 25 years, both in Bendigo and beyond.
"We're going to be serving everything from fresh sandwiches, rolls, filled pittas, wraps, pies, pasties, sausage rolls, cake, slices, everything," Mr Malone said.
"It's just going to be your general cafe, but we're going to be making everything fresh, daily here. So nothing frozen, nothing premixed. Everything's done from scratch."
