For the second time in as many seasons, Seymour batted through the Essendon innings as he posted a career first XI best of 161 not out in the Bombers' total of 6-309 declared.
Seymour faced 241 balls, hit 21 fours and three sixes. It was his third century at first XI level.
Seymour added 108 with former Sandhurst keeper-batsman Isaac Conway.
Conway made 57 off 101 balls - his highest score at first XI level.
To cap off a memorable day, Seymour bowled the final over of the day and his off-spinners claimed the prized wicket of Ringwood star David King.
Ringwood went to stumps at a precarious 2-6.
Crone led Carlton's attack in the battle of second versus third against St Kilda.
The Blues dismissed the Saints for 218, with Crone taking 5-49 off 21 overs.
It was the second time in Crone's first XI career that he's claimed a five-wicket haul.
Brayden Stepien took four catches behind the stumps for Carlton.
Meanwhile, the Victorian Super Slam T20 competition continues on Tuesday night.
Crone and Stepien's Blues squad is unbeaten after four games and they'll face a Kangaroos squad that includes Golden Square's Liam Smith, Sandhurst's Ash Gray and Bendigo's Kyle Humphrys.
Seymour, Conway and Liam Bowe will play for the Bombers against the Dogs at Merv Hughes Oval.
