Country Cob Bakery won the title of Australia’s Best Pie 2018 at an award ceremony held on the Gold Coast by the Baking Association of Australia.
Bakery owner Chan Khun said he was proud to have been awarded and recognised nationally for the bakery’s pies.
“It’s been a long year practicing,” Mr Khun said.
“If you work hard enough and have the passion, everything will become a reality.”
Mr Khun said the secret to the perfect pie was to have a good balanced pastry.
“The pastry on the top and bottom of the pie should not be too thick and not be too thin,” Mr Khun said.
“The top layers of our pies have a lot of layers and is nice and crunchy.”
He said the next crucial step to the perfect pie was the filling.
“And of course the filling is very important, we have a great recipe and source local ingredients.”
On top of being awarded overall Australia’s Best Pie 2018, the bakery also won gold in the categories for plain mince beef pie, seafood pie, flavoured beef pie, vegetarian pie and vegetarian pastie.
The competition involved 350 bakeries from around Australia and approximately 1700 different entries within multiple categories.
The bakery also won awards in 2017 for best gourmet pie and best plain mince pie and has received recognition for its award winning vanilla slice.
