Kyneton Police observed the 2016 Holden Clubsport travelling north on Sunday evening. The car was intercepted shortly after.
The driver, a 30-year-old Strathfieldsaye man, had his car impounded at a cost of $1225.
He is expected to be charged on summons with speeding offences.
The impound was part of Operation Arid, a statewide focus on keeping the community safe and reducing harm on the roads this long weekend.
The operation continues today.
During this time motorists should expect to have their vehicles scanned and be breath tested, drug tested and speed-checked, Victoria Police said in a statement.
The operation involves all available personnel including local road policing units, general duties, other operational policing units and centralised resources from road policing command.
