Organisers Linda Whillance and Tom Salmon said they were "blown away" by the sheer numbers at the first ever Moonlight Market on Saturday night.
"It was incredible...there was an unprecedented number of people," Ms Whillance said.
"The mall was basically packed. There was a community vibe ... it was like a big street party."
The pair estimate more than 6000 turned out to sample street food and check out handicrafts.
But the swarms of people caught some stallholders off-guard, and many people took to social media to complain about overcrowding and a lack of parking.
Many were parking their cars 15 minutes away to reach the market, while some locals with prams and children simply gave up because of the crowds.
Some of the food trucks were understaffed and had sold out of meals by 6.30pm, not anticipating such a response.
Ms Whillance said she had received feedback on social media and would look at how the logistics of the event could be improved, with the next Moonlight Market planned for October 24.
“We want to thank everyone who helped make the event such a hug success,” she said.
“The large crowds show there's a great demand for events like this in Bendigo.”

Bendigo Police Sergeant Damian Keegan said given the very high number of people in Bendigo at the football and at the markets, everyone was well-behaved.
“Considering the amount of people, the behaviour was exceptional. It was really good to see everyone out and about,” Sergeant Keegan said.
He said five people were arrested over Saturday night in the CBD for drunk and disorderly behaviour, but stressed there was “no adverse behaviour” from football spectators or market-goers.
He urged locals to continue their good streak and enjoy the upcoming long weekend by drinking responsibly.
