The Peter Manning-trained gelding notched up his 12th straight win following another outstanding trotting display.
The 2021 Breeders Crown champion, driven by another champion in Kerryn Manning, was made to work hard throughout by Keayang Chucky (Jason Lee), but demonstrated his class by powering away in the straight for an imposing 11-metre win.
Chasing a sentimental win in the race named in honour of his brother, trainer Chris Lang had to settle for a gallant second with More Wanted (driven by Kate Gath), with Keayang Chucky holding on for third.
Kerryn Manning could not have been more impressed by another tough and convincing effort by Plymouth Chubb.
"He's certainly one of a kind and one out of the box and it is a pleasure to get to drive a horse such as him," she said.
"He's built like he's five (years-old) and he just goes about his business like it's all in his stride.
"He's got all the attributes to go on with it and hopefully he can step up to the next class as he gets older."
Manning admitted she was content for Keayang Chucky to apply the pressure down the back straight.
"Jason got running a little bit before the 400m and got half a length on me, but I was sort of happy to do that because of what he did last time, (so) I was happy to stick with him as long as I could because when he has horses around him he seems really switched on," she said.
"I knew that once he straightens, he does that on the corners quite a bit - even in the Redwood - he looks sort of flat, but once he gets to the straight he goes again.
"I wasn't worried about that, I was more worried about what he would do once he hit the front."
Another devastating win for Plymouth Chubb was the perfect warm-up for his tilt at this year's Vicbred Super Series, with Manning adamant there were no plans to give the two-year-old a spell early in the new year.
It also served as the perfect gift to Peter Manning, who celebrated his 77th birthday on Saturday.
On a night celebrating the legacy of Victorian trots legends Graeme Lang and his son Gavin, Kerryn Manning was proud to claim victory in the race named after Gavin.
"Gav was a funny character, you never knew what he was thinking, unless he shook his head at you in a race and then you knew you were in trouble," she said.
"I very rarely ever beat him in a photo, but nobody did, so that was not a bad thing.
"He certainly would teach you things along the way and was happy to share any information. He was always great to follow in a race as you knew you would get out at some point following Gavin."
Remarkably, five of Plymouth Chubb's 12 wins have been at Group level, highlighted by his three Group 1s in the Breeders Crown, Redwood Classic and Home Grown Classic.
After being beaten aboard Keayang Chucky, Lee - who notched a driving double on Friday night - spoke admiringly of Plymouth Chubb.
"It's definitely tough when you are racing against him in the races, but straight after, and even walking around before the races, a couple of times Chris Lang and myself have thought they've let a four-year-old out here with the two-year-olds," he said.
"It's frustrating he's so good and we think ours is pretty good too, and I know Chris thinks a few of his are pretty good, but we can't beat him.
"From a perspective of watching it as a (racing) fan, I reckon it's awesome.
"It's great to still see Pete getting a superstar two-year-old. We definitely enjoy watching the good horses."
