The much-loved event was due to be held on August 28, but with current density restrictions of one person per four square-metres, organisers said the craft beer festival wouldn't have been possible.
"While Victoria has done a brilliant job squashing the latest COVID outbreak, we're not moving out of restrictions fast enough," the organisers said in a Facebook post.
"Current and expected capacity restrictions for events such as ours means that we will not be able to proceed on August 28. We need it to drop to one person per two square-metres.
"The entire BOTH volunteer committee have been working for the past six months to put as many contingencies in place.
"We're determined to make this event happen, honouring the entire reason we throw this event in the first place: to showcase the best indie beer and our awesome city of Bendigo.

The organisers were already looking on the bright side when they made the postponement announcement on Tuesday and said they were excited to hold "Australia's best spring beer festival".
"Bring on Saturday, October 23," the organisers said.
"Thanks everyone for the support, especially the awesome sponsors, breweries and venues who've been pushed from pillar to post for nearly two years and still keep a smile on their dial.
"We can't wait to party with you."
Ticket holders are advised that they will receive an email from GoTix in the next 48 hours about their options.
