Mr Seymour and his partner Tara opened the Penguin Beer Company, located in the north-west Tasmanian town of Penguin, this week.
The pair moved from Bendigo to Tasmania following a holiday to the Apple Isle in January last year.

"We came here in January last year on holidays and just feel in love with it. We went home to Bendigo (in Victoria), and came back 12 weeks later and bought this.
"We've been at it for a good 13 months; it's been a bit of a slog. But we've got a really good team of supporters and investors behind us, and it's just great to see local people getting involved."
Located in a former bakery on Penguin's Main Road, the couple hope to create one of Tasmania's best craft beer experience.
Scott has expertise in this area as a former owner of Basement Bar, one of the first venues to sell craft beer in Bendigo and as former organiser of Bendigo's annual craft beer competition.
"If you say 'it tastes like this' or 'it smells like this', it's all pretty abstract.
"But we'll be going through the actual, physical ingredients (through tasting sessions) so they can really build an appreciation.
"Where drinking trends are going, people are drinking less and they're drinking better."
The venue is aimed at being a family-friendly affair, without the classic industrial look of a brewery.
With walls are covered in vibrant prints, exposed beams defining the ceiling and a new deck, the venue looks over an ocean back drop.
"It's a very different space than what people may consider is a traditional craft beer venue," Mr Seymour said.
"We want this to be a place you can take your family on the weekend. It's about coming in, sitting down, talking to people while enjoying some live music, good beers and good food."
