AN ACCLAIMED central Victorian restaurant has gone out "on a high", shutting its doors as its sister business grows.

Australian Good Food Guide hatted Kyneton restaurant Source Dining closed earlier this year, nine years after it opened.
Owner Tim Foster said the move would allow the team to focus on Bendigo venue the Gold Mines Hotel.

Mr Foster said the move was closer to a "hibernation" of Source Dining, with the possibility it would reopen in some form in the future.
He said the move was a business decision based on a range of factors, including Source Dining's lease ending, and uncertainty around COVID-19 over the coming months.
Mr Foster said staff at Source Dining had all transferred to the Gold Mines Hotel.
He said the move would allow the Gold Mines to focus on a fine dining menu, including a five course degustation option, starting at the end of July.
Mr Foster said it was an emotional decision to close Source Dining, but a business decision.
"Going out on a high was one of the things we talked about. And we thought, we've held a hat for nine years, and that's what we should go out on," he said.
"We had another business which was the Gold Mines Hotel. It basically was growing, and it was about focusing energies on that."
Mr Foster said the Gold Mines Hotel was set to grow, even despite the difficult year behind the hospitality industry.
"One of the things COVID taught us was to adapt, and scrutinise every bit of expenditure we had. Things we'd never had the opportunity to evaluated, we evaluated," he said.
"All those things came into play as part of the COVID discussion, and that allowed us to trade through it.
"As we moved out of lockdown borders were closed, people wanted to actually go out. That was a real thing in terms of the business continuing to grow."
