The person acquired COVID-19 overseas and is currently in hotel quarantine, the Department of Health says.
The new case was recorded in the 24 hours to midnight and there are currently 21 people recovering from the virus.
Authorities administered 828 vaccinations on Sunday and that number could rise today as a new phase of the rollout begins.
People over 50-years-of-age can call and book in for a jab at Bendigo Hospital from today.
It is among Victorian venues throwing open their doors.
Health minister Martin Foley said Bendigo's site was among 22 and counting statewide.
"Initially, we are asking Victorians to phone up and book if you aren't headed to a high-volume vaccination centre," he said.
