Tyler Beacham entered his plea during committal proceedings in the Bendigo Magistrates' Court on Wednesday.
He was arrested and charged in December after a Long Gully service station was held up at knife point.
Police at the time alleged Beacham left the store with about $200 in cash. A knife, used to threaten the shop attendant, was left on the counter.
Court documents released at the time said the incident was captured on CCTV.
Police said Beacham, who was aged 25 at the time, demanded cash from the service station's till.
A kitchen knife was tucked into Beacham's pants when he entered the Eaglehawk Road premises, according to the documents.
