The caravan is believed to have disappeared from their Bassett Drive address about 4am on Sunday.
"We're just gutted, we can't believe it," one of the caravan's owners said.
The family had recently returned from a trip to South Australia in the four-bunk, off-road family van.
The 24-foot caravan was due to go into storage on Sunday.
"It's definitely a van people would notice," the woman said.
The missing Network RV is gunmetal grey in colour, with a big white strip along the middle and yellow trimming on either side of the white strip.
"What we've realised is someone has sussed it out prior to be able to work out what they needed to tow it away," the woman said.
She said the caravan had a unique towball. The woman said her daughter had seen someone playing with the hitch of the van on Thursday afternoon and another woman taking a photo of him doing it.
The woman said CCTV footage from the early hours of Sunday showed people walking up to the caravan to look at it before hooking it up to a black car and speeding down the road.
The car exited Bassett Drive closest to Braidies Tavern. It not known what direction it headed in next.
Police are investigating the theft.
Anyone with information is urged to call the Bendigo Police Station on 5448 1300 or Crime Stoppers on 1800 333 000.
