Bendigo's heading for a top of 28 on Monday and 31 degrees on Tuesday.
Temperatures are expected to reach the mid-30s in the Mallee on Tuesday, while Melbourne is forecast to receive its warmest Cup day since 2014.
Across central Victoria, top temperatures on Tuesday sit in the high 20s to low 30s.
Bureau of Meteorology senior forecaster Rod Dickson said this warmth across the state would linger overnight to Wednesday.
Bendigo's forecast low is a balmy 16 degrees.
But a change moving through the state on Wednesday will bring cooler conditions that are likely to hang around through the weekend, as well as possible rain.
After hitting an expected high of 26 degrees on Wednesday, Bendigo's forecast maximum for Thursday is 17 degrees.
Tops of 22 degrees are forecast for Friday and Sunday, while Saturday is expected to reach 17 degrees.
Mr Dickson said it was "pretty typical" for springtime to see warm temperatures one day and much cooler temperatures the next.
At this time of year, he said, the continent was heating up, and winds from inland dragged this heat across the southeast of the country.
"But the oceans to the south are still quite cold this early in the season, so once we do get those cooler southerly winds blowing from the Southern Ocean, we do get those wild changes in air mass," Mr Dickson said.
