Sarah and Harrison tied the knot on May 16 - a date chosen because it was their anniversary as a couple.
"We always planned to get married then," Sarah said. "We held out and made a decision about a month out from the date to go ahead.
"I was always under the impression we wouldn't be able to have it, but Harrison really wanted to hold out for that date. In the end we were able to have 10 guests."
Catelyn and Rhys were set to be married on April 4. They originally postponed for a year but in August decided to get married on September 1.
COVID-19 restrictions meant they weren't able to invite guests.
"Two weeks before hand we just said 'let's do it'. September 1 was the date Rhys proposed and we were sick of the back and forth with restrictions," Catelyn said.
"Having no guests made easier. If we were allowed 10 it would have been hard to choose who to have. Rhys and I have family in NSW, so we weren't sure who would be able to come."
For both couple's their first wedding anniversaries are set to be exciting affairs with plans to celebrate with family and friends.
"We will still have a celebration in April (when the wedding was planned for) if restrictions allow that," Catelyn said.
Sarah plans to wear her original wedding dress at their event in May, 2021, which will include a vow renewal and reception for family and friends.
"Neither of us wore what we planned to," Sarah said. "We didn't want to take away the surprise of the big dress. Now, we have something planned May 15 (next year), the day before our first wedding anniversary."
The Lukes were married at Waratah Weddings in Huntly in front of their 10 guests and two dogs Reggie and Lisa.
Sarah said it was difficult reduce their guest list from 80 to 10 - particularly when it came to the bridal party.
"We both ended up having both our parents there, our photographer Sophie O'Keefe, then (Harrison's sister)," Sarah said. "But then we had to decide from the four we each had in our bridal party. Harrison's best man was always there but for me it was harder.
"My maid of honour is from Townsville and couldn't come, so I decided have a quiz with my bridesmaids. Whoever got the most questions right about me and my interest came. It was an awkwardly fun way to (decide)."
Having no guests took a lot of the stress away for Catelyn and Rhys.
"We're were all organised to go with 90 people (on April 4) but it was cut down in the weeks leading up to it with people deciding not to come," Catelyn said.
"It was pretty stressful. We had two friends getting married the weekend before us and they were rushing, trying to change things, figuring out how many they could have, and moving it outdoors.
"Watching how stressed they were, we just called it. We were sad on the day when April 4 came around and it was tough our mental health."
On their wedding day in September, Catelyn said she and Rhys had no regrets.
"We really loved it," she said. "It was nice to focus on each other for the day and not spread attention to other people.
"What was challenging was decided whether to film it live or not. In the end, we decided not to because I am a stress head and Rhys' family aren't great with technology.
"We ended up hiring a videographer because we were getting married without everyone there."
Sarah and Harrison's day also went well.
"Harrison arrived with his two groomsmen and set up the chairs and met our celebrant and photographer. Then I arrived a little later with the parents and guests," she said.
"The day ran really smoothly. I still got to walk down the aisle but the dogs went a bit crazy in the fountain afterwards."
