Mitchell Street's Tageskarte is the brainchild of locals James Stevens and Matthew Murray, who were drawn to the cuisine following positive experiences in Melbourne and Sydney.

"We thought we'd break the mould and open something completely different," Mr Murray said.

Tageskarte isn't the duos first hospitality venture, with the pair operating Killians Walk's Gaijin Eatery, specialising in south east Asian street food.

"At the time, there was nothing like it Bendigo," Mr Murray said.

"Gaijin is doing really well and we adapted that idea and applied it to Tageskarte."

A unique offering was at the top of the list when it came to opening a new venue, with the pair enjoying their exposure to German cuisine when dining outside of Bendigo.

"We always found ourselves in German restaurants and cafes, eating and drinking in those types of venues that featured a distinctive fit out," Mr Stevens said.

"We wanted to share that with everyone who comes and dines at our venue."

Tageskarte features old timbers, with inspiration taken from the 1940s and 1950s.

"Stained glass windows, original timbered doors and brass fittings were all part of the existing building and we didn't want to hide any of that," Mr Murray said.

"We stripped it all back and wanted to show the age of the building and incorporate it into our business.

"In terms of the fitout, James and I were on the same page without knowing it."

The restaurant is open for breakfast and lunch only, since launching a week ago.

An upstairs dining area is part of plans for future expansion, where the cafe will evolve into a restaurant, with an expanded menu.

Tageskarte translates to daily menu and encapsulates the changing menu that Mr Murray and Mr Stevens hope to offer in the weeks to come.

"We've already had some repeat customers, which is great and the excitement of a brand new venue gets a lot of people through the door in the first few days," Mr Murray said.

The challenges of opening a new business amid the coronavirus pandemic was not lost on the pair of young restaurateurs.

When the second lockdown was enforced, Tageskate remained adamant they'd open, even as a take-away only business.

"We would worry about the restaurant side of things when we can seat people," Mr Stevens said.

"The main thing COVID-19 did was increase the wait times for goods," Mr Stevens said.

"Ordering kitchen and cooking equipment and getting it delivered took a couple of weeks, instead of a couple of days.

"With that taking a lot longer than expected, it pushed our timeline back further than anticipated."

Tageskarte is located at 20 Mitchell Street, Bendigo and open from 7.30am to 3pm, Monday to Saturday.
