Bendigo's Everbean Cafe plans to open in the formerly vacant shop front next week.

The business was forced to move after their Williamson Street premises were sold in December.

Owner Jacinta Jones said she hoped to close for just a month, but the pandemic meant everything had taken longer.

Cafe staff are about to begin calling their regular customers to let them know they'll be re-opening.

Ms Jones stumbled across the old Gillies Pie Shop when she was looking around the central business district for a premises. There wasn't much at the time, but the space caught her eye.

"Gillies sort of struck our interest. It's a lot bigger than it looks like," Ms Jones said.

"It's got a lot more appeal to it in a lot of ways than the old place, the parking's a lot better. Although it's on the corner, it's a lot more accessible."

Inside the space has been completely redone, from the classic Gillies' red. Ms Jones has put in a kitchen and a brand new recycled timber counter.

Ms Jones said the cafe offered traditional cafe style food, all made fresh on the premises. She said the cafe was known around Bendigo for its freak shakes.

The cafe will open for takeaway for a few days before restrictions ease to allow dining in.

Ms Jones is keen to see familiar patrons again, after several months hiatus.

"One of the biggest thing about being closed for so long is missing all of our beautiful regular customers, and we can't wait to see them again," she said.

Everbean Cafe opens for takeaway on Tuesday, at 1 Queen Street, Bendigo.
