The bar has been months in the making and, from its third-storey location in Mitchell Street, offers panoramic views of the city.
General manager Caitlyn McHutchison said she had enjoyed seeing people's reactions to the space and views.
"People stand at the edge and just watch everything go by," she said. "Seeing every person's reaction when they come up here has been amazing.
"I came up here in November when it was a bit of shell still and have seen it transform from there. I was shocked (when I first saw the views), I didn't realise a place like this existed in Bendigo.
"I always thought maybe the poppet head has the greatest view of Bendigo but this is the next step up."
The bar's staff are expecting a busy weekend during the venue's first few days of operation.
"We've had a couple of people come check it out today but after work I expect a lot of people to come through," Ms McHutchison said.
"Bendigo has a growing food culture and has a lot of places to drink. This year it will evolve even more."
