The three-year-old gelding came from near last before the home turn, to seize his opportunity down the straight and record a fast-finishing win in a 1400m benchmark 58.
It was Gentle's first win since Ready Street's class two win at Corowa on June 13.
Winning jockey Ryan Hurdle praised the galloper's toughness.
"He showed plenty today," he said.
"We were a little bit worried about the gate (barrier 11) and I had to drag him back a bit further than I would have liked.
"But he travelled really nicely into the straight and took the runs. He wasn't hesitant at all - he got home really well.
"He was sprinting strongly to the line."
The win was Ribbon Of Choice's second in 11 career starts.
He previously won on debut at Bendigo in August last year.
Meanwhile, Echuca trainers Donna Gaskin and Michael Cornish continued their purple patch of form at Mildura.
The pair won a 1300m maiden with three-year-old filly Hi Suppose, who broke through for a victory in her seventh start.
It continued a run of three winners from four starts for Cornish and Gaskin-trained gallopers, which started at Mildura on July 3.
They narrowly missed making it double when I'm The Boss, who previously won at Mildura on May 22, finished second behind Ribbon Of Choice over 1400m.
Jockey Bradley vale said Hi Suppose had been more than a little unlucky in her recent starts.
"She's been a victim of circumstances the last few," he said.
"Just getting that nice cosy run in behind the leaders (helped) ... she sprinted well."
