The incident occurred about 11.30pm Saturday in the hotel's toilets.
Bendigo Sergeant Adam Woods said the victim, 18, went to hospital, requiring stitches.
"There were two unknown males, one of which assaulted the victim with the bottle," Sergeant Woods said.
"Basically the two males left the scene as soon as that happened.
"The offending male was wearing a cap with a cannabis leaf logo and a grey hooded jumper."
Ambulance Victoria spokesman John Mullen said the injured man was in a stable condition when officers transported him to Bendigo's hospital but had lacerations on his face.
Sergeant Woods said the reason for the attack was unknown and appeared to be unprovoked.
"We are seeking any potential witnesses or anyone with any knowledge relating to this incident," he said.
Anyone with information, or knowledge of the two men's identity, should contact Bendigo Police Station on 5448 1300 and speak to Constable Sheldon Roberston, who is leading the investigation.
