The dark green BMW was left outside an Eddington antique store about 12.30pm on Friday, with the keys inside the car.
Police said a woman was then spotted walking up to the car and proceeded to drive off in the 1996 sedan.
The car was sighted in Maryborough shortly after travelling at speed and then at Newbridge that night.
A walker found the car about 10am today on fire in Collins Street, Kangaroo Flat.
Police said it appeared the car had crashed into a tree before the fire started.
No driver was found at the scene.
Both the Kangaroo Flat and Bendigo fire brigades were called to the bushland scene.
Sergeant Travis Dole said the woman, believed to be in her 20s, was wearing grey tracksuit pants, a white top with long grey sleeves and had dark, shoulder-length hair.
Police are calling for anyone who may have information on either the fire this morning, or the theft of the car. The registration number of the car was NWM 931.
Anyone with information can call Maryborough police on 5460 3300, Crime Stoppers on 1800 333 000 or submit a confidential report at www.crimestoppersvic.com.au.
