The theft of the Samsung Galaxy S7 phone occurred at 4.50pm on Tuesday evening, shortly before the store was due to close.
The suspect first attracted attention from shop staff when he set off an alarm attached to an Apple iPad.
After he was approached a store employee, the man then moved to the Samsung phone, cutting its security cord with an unknown tool and running out of the shop.
The stolen phone is valued at almost $1200.
Police have obtained CCTV footage of the incident.
