The haunt, which is already proving popular since opening earlier this month, is situated in what was formerly part of the Grimsby Roller Flour Mill in Wills Street.
Operating as the main flour processing mill in Bendigo from 1887 to 1970, the mill was named after the town of Grimsby in England.
Owner Nino Renato has worked in the hospitality industry for more than 10 years.
"I have always wanted my own little place, somewhere classy, where people can go and have a conversation over a coffee," he said.
Mr Renato said the shop was a quality coffee house but will offer a range of hot beverages, including tea, hot chocolate as well as traditional Italian style biscotti and flamigni biscuits and cold drinks too.
He said he chose the old flour mill because of its heritage.
"People love their heritage and I thought it would get some good foot traffic," he said.
"So far business has been good."
Mister Grimsby Coffee will open Monday to Friday from 7am to 4pm and Saturday from 8am to midday.
