The 21-year-old Mansfield man was arrested in Kyneton and was taken to a Melbourne hospital with non-life threatening injuries after the pursuit about 8.30am on Tuesday.
Senior Sergeant Geoff Owen, of Kyneton police, said the motorcyclist was spotted travelling south at more than 160km/h on Heathcote-Kyneton Road.
Police started a pursuit 15 kilometres north of Kyneton.
"Due to the high speed of the motorcycle, the pursuit was terminated," Senior Sergeant Owen said
Another officer was pulled over on the side of the road further south on Heathcote-Kyneton Road and spotted the motorcycle still travelling at high speed.
Senior Sergeant Owen said the motorcyclist collided with a traffic island on the approach to the roundabout at the intersection of Edgecombe and Beauchamp streets.
He said the motorcycle tumbled several times and the rider was thrown rolling along the ground.
"He then got up and ran from the scene," Senior Sergeant Owen said.
Police found the man a short time later hiding southeast from the crash site.
The motorcycle was found to be unregistered and the man was unlicenced.
Senior Sergeant Owen said the rider was not prepared to negotiate the roundabout.
"The rider appeared to be unfamiliar with the area," Senior Sergeant Owen said.
"There were significant skid marks before the roundabout, indicating the man had been breaking heavily before the intersection."
The man was arrested and taken by ambulance to a Melbourne hospital.
He will be charged on summons for driving unlicenced, driving an unregistered vehicle, evading police and speeding offences.
