Yard Bird, an American-styled eatery, opened above the Shamrock at the end of October last year.
Owner Jim Hogan said the bar offered patrons casual dining in a relaxed and friendly environment.
He said he'd never seen anything with the same degree of American authenticity in Victoria.
"I think in Australia we are going down the path of a cafe culture, where you sit by yourself and don't mix with the staff or other people," Mr Hogan said.
"In America, people are comfortable going to bars by themselves. They can talk to staff, enjoy a meal - it's a lot more friendly than a cafe and not as isolated."
Mr Hogan said the bar stocked mostly American beverages including beer on tap, imported bottles, wine and cocktails, as well as international drinks.
He said the menu was solely American and included southern fried chicken, brisket, tacos, buffalo wings and other smoked meats.
He said patrons could also build their own burger.
"We have quite an extensive menu and it changes regularly," he said.
The bar's balcony overlooks Pall Mall. Mr Hogan said the bar tried to "capture a sense of Melbourne" through roof top dining.
"It's the best view in Bendigo. It's so nice to sit out on the balcony and watch the world go by," he said.
Mr Hogan said since opening feedback had been positive.
"I think people are grasping the concept. Feedback has been good," he said.
The bar also has a television and broadcasts American sports on ESPN.
It is open on Thursday and Friday from 5pm to late and Saturday and Sunday from lunchtime to late.
The bar will be open on Monday for the Superbowl. There will also be events on other American holidays.
