A prettily wrapped box of home-made rocky road will have the personal touch. These bite-sized delights are perfect served after the Christmas feast with coffee or simply added to your favourite creamy vanilla ice-cream to create a Christmas dessert laced with Frangelico.

It is said he blended hazelnuts, berries and flowers to flavour his liqueur, called after him.

Rocky road two ways
Ingredients
200g pkt Jubes
175g pkt marshmellow bites
12 glace cherries
1 cup salted peanuts
½ cup slivered almonds – toasted
¼ cup coconut – toasted
½ cup raisins
2 x 220g blocks milk chocolate
1 x 220g block dark chocolate
Method
Line a 30cm x 21cm lamington pan with baking paper. Allow an overhang as this makes for easy removal.
In a large bowl, mix together jubes, marshmellows, cherries, peanuts, almonds, coconut and raisins. A total of six cups is required. Set aside.
To melt chocolate you’ll need a bowl that will fit over a saucepan. (Baine Marie). Place small cubes of both milk and dark chocolate into bowl over simmering water. Slowly melt chocolate, stirring frequently. Once smooth, remove bowl from saucepan.
Pour melted chocolate over filling. Mix well to coat. Spoon into lined pan. Give a little shake to settle filling. Refrigerate until firm – about four hours. Remove from fridge 30 minutes before cutting into bite-sized pieces with a serrated knife.
Tipsy rocky road ice-cream
1 litre classic vanilla ice-cream – I used Connoissuer
3 generous handfulls roughly chopped rocky road
1 tablespoon Frangelico liqueur
Method
Remove ice-cream from container into a large bowl to soften. Fold through rocky road along with liqueur. Freeze.
Enjoy topped with extra chunky rocky road.
