Foundation 97's Spinal Cord Injury Appeal, which will start at 6.45pm at the Bendigo Exhibition Centre on November 22, aims to raise money and awareness about people with spinal cord injuries.
Organiser Tracey Clarke said Mr Adams, who hails from Mildura and suffered a spinal cord injury about three years ago, was an inspiring figure still active in the racing world.
"We feel very lucky to have him," she said.
Seats at Mr Adams' table will be available for those interested in "picking his brains", Mrs Clarke said.
Extreme sports freestyle team, Flair Riders and a shearing event would be part of the night's entertainment, as well as a silent auction, raffles and prizes.
The event, which is timed to coincide close to Spinal Cord Injury Awareness Week next week, will also give Foundation 97 a chance to announce its first grants.
"We only opened our bank account in February and thought we would only have enough for one grant, but we have enough for two," she said.
She said the grant side of Foundation 97 focused on helping people with non-funded spinal cord injury, which represented more than 60 per cent of those with the injury.
"For some people with spinal cord injury there is very limited government-funded support, certainly not enough money to purchase equipment to get back into the community... keep the mobile and keep them out of the health system," she said.
