The 33-year-old won four events at the National Wildwater Championships in Tasmania last week, winning a spot on the Australian team for next year's world championship events.
Packham won the short sprint, long sprint, classic and teams event on the Mersey River and Brady's Lake courses.
"It is awesome to represent Australia," she said.
"We don't get to experience (high intensity) whitewater here in Australia, so to be able to go over to Europe and paddle is amazing."
Packham said she was looking forward to the challenge of going up against the best paddlers in the world.
She will be competing in both Austria and Slovenia in June.
"It is a pretty big format (next year), a lot of the races back on to each other," Packham said.
"Next year is a sprint year and the sprints are 200m or 300m and will be on a man made course in Vienna, which will be even more challenging."
The Bendigo woman said part of her preparation would see her train on Lake Weeroona.
"I will train mostly on the lake," Packham said.
"The whitewater helps with the flat water sprints and vice versa, but when I do my long distance sessions I would go to Lake Eppalock or Bridgewater," Packham said.
"Then to get that whitewater experience I would go to the top of the Yarra or to Eildon or even up to Big River, so there is a lot of travelling involved."
Packham said she would even have to spend time in Tasmania over the next eight months to prepare herself for next year's international event.
"They have amazing whitewater there," she said.
"Brady's course, that is grade four whitewater, which is what we will be racing in next year."
Packham began competing in the whitewater format as a junior before taking a break from the sport.
"I had 10 years off canoeing completely and in my late 20's I came back into the sport," she said.
"This is my third time in the Australian team and possibly my last, we will just see."
