Graham Austin, 39, appeared at Bendigo Magistrates Court on Monday after spending the past 30 days in custody.
He was arrested last month on outstanding warrants after he failed to answer bail.
Austin is facing at least 13 charges including recklessly causing serious injury, unlawful assault, and a string of deception charges.
The court was told that in the early hours of December 18, 2012, Austin violently attacked an employee at Melbourne CBD convenience store Star City after trying to steal a bag containing about $200 in cash.
It heard the man allegedly punched the victim repeatedly to the face, head and body and knocked him to the ground before the fight continued outside.
The victim suffered a blood nose, a laceration on his ear requiring stitches and scratches and bruises on his body.
Police opposed bail, alleging Austin had actively avoided police for months and had continued to offend while on bail.
Austin's defence lawyer called evidence from the man's mother-in-law, who testified she would provide Austin with accommodation and would report any misbehaviour to police.
Magistrate Richard Wright bailed Austin on strict conditions including he abide by a curfew between 9pm and 6am, report to police three times a week and not use illicit drugs. The case was adjourned to November.
