The Malayan Orchid's Bob Yam, the Brougham Arms' Greg Egan and Rocks on Rosalind's Ben Massey will vie for the Best Chef State Award in Melbourne on Wednesday.
The winner will receive a trip to Europe courtesy of Garuda Airlines.
State project manager Pamela Jewson said this was the second year the airline had offered up the prize.
"We know the blood, sweat and tears that go on behind the scenes of our kitchens and we wanted to reward the chefs that are making central Victoria shine," she said.
"Tourism Victoria has recognised we are keen to stay at the cutting edge of innovation in awards and we are not resting on our laurels."
The three finalists will compete in a mystery box cook and will be required to cook an entree and main course using the ingredients from the box.
The chefs will be judged by a panel of food experts, including former editor of the Age Good Food Guide Rita Erlich.
The Golden Plate Awards program is an industry recognised restaurant competition.
