Holstein Australia Victorian delegate Jon Holland, of Newbridge, said north-west Victorian Holstein breeders came up with the idea to have a winter fair, complementing Dairy Week which happens in summer.
They hope members of the public will attend to learn more about the dairy industry.
"The fair will have everything in the one complex," Mr Holland said.
"It should be a really good atmosphere."
The fair showcases autumn calved cows and features market stalls with products including cheese, ice cream and chocolate.
Entries of 220 Holstein females from about 55 exhibitors are expected, with exhibitors travelling from all over Victoria, Lower New South Wales, South Eastern South Australia and Tasmania.
The event runs until Sunday.
