Detectives say the "heartless" thief cut the chain to the Returned and Services League tin and covered it with his jumper before putting it in a green bag and riding away on a push bike.
Witnesses said the man loitered around the counter of the store on Queens Parade last Saturday, while buying an ice-cream about 9.50pm, before stealing the charity tin.
The store has provided CCTV footage of the theft, and police have obtained footage and still images of the man they want to question.
He was last seen riding north on Dummit Crescent, and is described as about 165 centimetres tall with black hair and a tattoo on his neck.
