It's even making its dozens of stall-holders some dough.
Among the stallholders is Maldon resident and artisan bread maker Ken Hercott, who will be at the market with his trademark donkey and bread cart selling Bread Builders bread.
Mr Hercott makes by hand about 180 loaves a week solely for Maldon Market using local organic wholemeal, stoneground flour.
He said he had always dreamt of making his own bread and delivering it on a horse.
Then he got hold of an old bread cart from his brother’s farm, fixed it up and got a donkey from a friend.
Now he’s loving making a living making bread using the same techniques the Egyptians used 3000 years ago.
“It’s a food product, it’s not just a commodity,” he said.
Maldon Market is on from 9am-2pm in Fountain Street.
