FORMER Bendigo baker Brenton Lang has been recognised with an award.
Mr Lang owns Rustica Sourdough, which received a Royal Agricultural Society of Victoria award for Best Victorian Product for its passionfruit curd filled tart.
The former Bendigo resident created the tart with pastry chef Steve Nicholoff.
Mr Lang, who used to work at The Good Loaf, opened the Fitzroy cafe in May 2012.
The business also won a silver medal at the 2013 RASV Royal Melbourne Fine Food Awards and five bronze medals.
“We were very rapt with the result,” Mr Lang said.
“It was the perfect tart, I guess.”
Mr Lang left Bendigo to start the business, which he said had so far been highly successful.
“It’s developed so fast,” he said.
“We’re just trying to steady the pace and keep up the consistency.
“We’ve got a really good wholesale clientele and we’re stocked in lot of good niche cafes in the inner city suburbs.
“The award was a good win for the team."
Mr Lang said he was looking to open a pop-up shop in the next 12 months.
