Mr Baxter owns The Dispensary, one of Bendigo’s most successful restaurants, and was this week named on The Age’s Epicure list as having one of the 12 finest restaurant beer lists in the state.
Only three regional restaurants were named on the list and the Chancery Lane restaurant was the only one from central Victoria.
Mr Baxter said it was humbling to find out his restaurant was named as one of the best.
“The Epicure list is the holy grail and to be deemed one of the top 12 is amazing,” he said.
“James Smith, who has the most read beer blog in the country, created the list and he said that we had created close to one of Australia’s best overall drinks lists.
“That comment blew me away; it is a dream come true and a great thing for Bendigo.”
The Dispensary has 100 different beers on its list and Mr Baxter continues to find craft beer from around the country and the world.
“Three-and-a-half years ago, when I opened, it wasn’t about being the most popular or good looking; I wanted to create the all-round best list of drinks in Australia, and we are nearly there,” he said.
Mr Baxter said the people of Bendigo were now spoiled for choice for food and beer.
“Whirrakee is a one-hat restaurant, doing wonderful polished food, and Masons is the new darling restaurant. I think the chefs there are doing wonderful things,” he said.
Mr Baxter said he hoped his restaurant’s recent success would encourage people to come from Melbourne to Bendigo. ?
