Police confirmed the man entered the Safeway Liquor at Centro Plaza around 6.25pm.
Two staff members were in the store at the time of the robbery but claim the man did not physically harm them.
Speaking from Safeway Liquor last night, Detective Tony Roberts said the man has made demands for cash before fleeing scene by foot.
Detective Roberts called for any witnesses to contact Bendigo Police on 5448 1300 or Crime Stoppers on 1800 333 000.

Police are hunting a knife-wielding bandit that held up Safeway Liquor at Centro Plaza in Kangaroo Flat tonight.
Detectives and the crime investigation unit have arrived at the scene.
Police have cordoned off the entrance to Safeway Liquor.
A witness at the scene said the hold up took place about 6.30pm.
Detectives are interviewing staff inside the building.
Police units are scouring the surrounding area.
